14g/ 1 tbsp. Soy sauce and 14g/ 1 tbsp. olive oil ($0.50)

In a heavy skillet, over medium heat, Sauté chopped onion and garlic in olive oil until fragrant.
Add chicken thighs, season, and brown on both sides.
Remove the chicken thighs and set aside
Add 480ml/ 2 cups of water or chicken broth, then bring to a boil. Add the rice and return the chicken to the pan, cover, and simmer. Add the frozen veggies half-way through the cooking process then cover and cook until rice is done and chicken is tender. Internal temperature for chicken thighs is 165F/74C.
Finish with a splash of soy sauce and a sprinkle of pepper.
This hearty, flavorful dish costs under $10 and makes enough for two generous (or 4 half) servings with leftovers for lunch.
